I keep finding overly complicated recipes for this simple comfort food.
While I'm not personally a fan of ketchup in cooking, this is a popular dish and frequently seen in anime.
Tldr: Left over rice, pan fried with some chicken (or just fried rice with protein) and ketchup folded inside a thin omelet (like a taco) with a squirt of ketchup on top.
3C chicken and veg fried rice
1T butter or olive oil
3T cheese (optional)
1T ketchup to cook into rice, keep bottle handy.
1 1/2 C rice
1T olive oil
1T soy sauce
1/2 medium onion
1 chicken thigh
1/2 C frozen mix veg
Whisk 2-3 eggs together with a couple tsp of milk, plus a little salt and pepper
Melt butter over a medium heat, add egg mixture. Run a spatula under the edges to release them from the pan. Tilt the pan to spread it out.
Sprinkle cheese over the omelet if you want.
Add the filling to the middle, flatten and turn off heat.
Fold the sides of the omelet so they partially cover the filling. Slide the omurice off of the pan onto your plate with the folds facing down.
Squirt on some ketchup and dig in!
